Week 1 Highlights: Healthy Snacks for Summer

During Week 1 of R&S Summer Camp, we made delicious, healthy afterschool snacks together. Campers blended three kinds of smoothies—Super Green, Strawberry Banana, and Peanut Butter Banana—for a refreshing treat. We also mixed and rolled no-bake Energy Balls packed with oats, peanut butter, honey, and chocolate chips. Perfect snacks to keep everyone energized all summer long!

 

Afterschool Snack
Smoothies 

  1. Super Green

    • Ice

    • Banana

    • Pear

    • Frozen Mango

    • Spinach

    • Ginger, optional

    • Coconut Water 

  2. Strawberry and Banana

    • Ice

    • Banana

    • Frozen Strawberry

    • Coconut Water or Milk

    • Yogurt, optional 

  3. White - Peanut Butter, Banana & Whey Protein 

    • Ice

    • Banana

    • Scoop of Peanut Butter

    • Scoop of Vanilla Whey Protein

    • Milk 

Afterschool Snack
Energy Balls 

Ingredients

  • Old-Fashioned Rolled Oats, 1 cup

  • Peanut Butter, ½ cup

  • Ground Flax, ½ cup

  • Mini Chocolate Chips, ¼ - ½ cup

  • Honey, ⅓ cup

  • Vanilla Extract, 1 tsp

Directions

  • Combine all ingredients in a mixing bowl. 

  • Stir to combine well. 

  • Cover & chill for 30 min. 

  • Roll into rounds. 

  • Keep refrigerated, enjoy!
