Fall Farmers Market Finds — Squash

In this class, we’ll celebrate fall squash together.

I’ll show you how to make Roasted Delicata Squash with hazelnuts and burrata, plus a hearty Butternut Squash Salad with chickpeas, kale, and couscous.

What You’ll Need

Shopping List

  1. Delicata Squash (1 or 2)

  2. Butternut Squash (1 medium-large)

  3. Burrata 

  4. Pearl couscous (can sub quinoa here) 

  5. Fresh kale

  6. Chickpeas (1 can)

  7. Pomegranate seeds (if you can find one, this is a nice to have!)

  8. Feta (if desired)

  9. Basil (if on hand)

  2. Apple cider vinegar

  3. Balsamic vinegar

  4. Honey

  5. Butter (½ stick)

  6. Ground pepper

  7. Dijon mustard

  8. Onion (red or white)
